Haritaki is the dried fruit of *Terminalia chebula*, a tree native to South and Southeast Asia. Known as Samo Thai in Thailand, the fruit has a long history of use in Ayurvedic and traditional Thai herbal practices.

About this ingredient
Haritaki is obtained from the mature or nearly mature fruit of Terminalia chebula, a deciduous tree found across parts of South and Southeast Asia. In Thailand, the fruit is traditionally known as Samo Thai.
After harvesting, the fruits are cleaned and carefully dried before being prepared as whole dried fruit, coarse material, powder or extract. The dried fruit has a characteristically firm texture and an astringent, bitter and slightly sour taste, reflecting its naturally high concentration of tannins and related polyphenolic compounds.
Haritaki has a prominent place in Ayurveda and is also recognised within traditional Thai herbal practice. It is one of the three fruits traditionally combined in Triphala, alongside Amalaki and Bibhitaki.
The fruit naturally contains chebulagic acid, chebulinic acid, chebulic acid, gallic acid, ellagic acid and other plant polyphenols. Its precise composition varies according to botanical origin, fruit maturity, growing conditions and processing.
